Honey Roasted Rosemary Nuts

At this time of year, the hedgerows are starting to fill with ripening nuts though obviously you can always pick them up at the supermarket. This simple recipe makes an amazing snack, though be warned… they are incredibly addictive!


YOU WILL NEED:

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 1 tablespoon brown sugar

  • 1/4 teaspoon cayenne pepper (optional)

  • 2 tablespoons fresh rosemary chopped

  • 1 1/2 teaspoons sea salt more if needed

  • 5 cups mixed raw nuts e.g. walnuts, pecans, and hazelnuts


How to MakE:

  1. Preheat oven to 180ºC (350ºF) and line a large rimmed baking sheet with baking parchment paper.

  2. In a mixing bowl, whisk together oil, honey, cayenne pepper (if using) rosemary and sea salt. Add the nuts and mix well until nuts are evenly coated.

  3. Roast in the oven for 15-20 minutes, stirring every 5 minutes to avoid burning.

  4. Remove from oven and allow to cool completely, and enjoy!
